My mango salsa went over well with the crowd. Perhaps my friend Lee was right when she said I picked the wrong business?
Anyway, if you want to try it out, here's the recipie. (Halve it for a smaller sample). Goes well with chips, or on fish.
2 mangoes, diced.
1/2 cup red bell pepper, diced
1/2 cup red onion, diced
2 jalapenos, finely diced. (Remove membrane and seeds. Protect your hands with latex gloves while handling.)
4 T cilantro, chopped
1.5 T basil red wine vinegar (substitute 1 T white vinegar)
juice of 1 lime
juice of 1 lemon
1/4 t salt
Combine all ingredients except salt in a bowl. Add salt. Mix. Let refridgerate for at least 2 hours. Use within 4 days.
